KFC Coating Mix

1/2 cup Accent (msg)
1 1/2 Tbsp cumin
6 cups flour
1/2 Tbsp cayenne
1/4 cup salt
1/2 Tbsp garlic powder
1 1/2 Tbsp black pepper
1/2 Tbsp thyme
1 1/2 Tbsp white pepper
1/2 Tbsp paprika
1 1/2 Tbsp oregano


Mix and store. Dip chicken, fish, pork, etc., in egg/milk,
coat with mixture. Brown in frying pan or put in the oven
@ 350 degrees F until done.

Weather has been too funny to fish, so I went out hunting Upland Birds.

After cleaning the birds, I fried up the legs, wings and a few scraps I created while cleaning.

All I used was butter, salt, pepper and a little garlic powder. It tasted really good.

The breasts I used to make a supper for us.

This recipe is pretty easy. I actually modified it from a complicated one out of a book!

After cleaning the birds, Sharp Tailed Grouse shown here, make up your favorite boxed stuffing mix. When done, add 3 tablespoons of chicken stock to it.

Cut the breasts in half, not all the way through, one portion per person, . Put a big tablespoon of stuffing into the middle of the breast, then wrap it in 2 slices of bacon each and hold together with a couple toothpicks.

Put them in a glass cooking dish sprayed with PAM, add a couple tablespoons of chicken stock and cover with tinfoil.

Bake at 350 degrees for 45 minutes. Remove the tinfoil and bake for an additional 15 minutes. Remove from the oven and add your favorite sauce, I used a couple tablespoons of bought Alfredo sauce.

Then enjoy with you favorite side, we had crescents and it all tasted EXCELLENT!
